The FSS Expert program is an intensive, comprehensive 5-day course designed for seasoned professionals and dedicated wine enthusiasts seeking the highest levels of mastery in the global wine landscape. Tailored for advanced sommeliers, hospitality leaders, and industry specialists, the program delves deeply into the intricate influence of terroir, viticulture, and winemaking techniques on wine character and quality.

This course provides expert-level insight into the profound effects of terroir, viticulture, and winemaking across major Old World regions. It delivers advanced knowledge of global sparkling win and fortified wines, with a focus on iconic regional styles and quality benchmarks.

The program also analyzes current global wine markets, trade regulations, evolving consumer trends, and premium/luxury positioning strategies in the Old World. It is ideal for professionals targeting top-tier certifications (such as Master Sommelier, WSET Diploma, or CMS Advanced/Master Sommelier) or senior leadership roles in the industry.

Examination & Assessment Criteria

  • Written Examination: 40% Composed of 50 multiple-choice questions and 5 open-ended questions assessing theoretical knowledge from all chapters.
  • Wine Tasting Evaluation: 60% Practical tasting session assessing students’ ability to analyze and describe wines using professional tasting techniques.

  • Demonstrate expert-level knowledge of global sparkling wine production (traditional method, tank, ancestral, and transfer methods) and fortified wine production (including oxidative and biological aging styles), encompassing major regional expressions, key production techniques, iconic styles, and internationally recognized quality benchmarks and indicators.

 

  • Conduct advanced, structured blind and deductive tastings with professional precision: accurately identify key sensory markers (aroma, flavor, structure, texture, balance, and finish), evaluate wine quality and complexity, and deduce origin, grape variety(ies), style, vintage influences, and overall quality level.

 

  • Apply sophisticated sommelier and hospitality expertise in diverse global service environments, including strategic wine list curation and development, articulate tableside communication and storytelling, precise service protocols, and tailored guest engagement and recommendations for both local and international clientele.

 

  • Analyze contemporary global wine markets, including trade regulations, import/export dynamics, evolving consumer trends and preferences, and strategic positioning approaches employed by Old World regions to maintain and enhance their presence in the premium and luxury wine sectors.
