rice, water, yeast, and koji.
From these elements, brewers craft a wide variety of styles based on:

  • Rice polishing ratio (Seimaibuai)
  • Whether alcohol is added or kept pure
  • Brewing method & style

Main Types of Sake

1. Junmai (純米)

Pure rice sake — no added alcohol.

2. Honjōzō (本醸造)

Made with a small amount of added alcohol to enhance aroma and texture.
