About Champagne

Champagne is the northern-most fine-wine region of France, lying 150 km east of Paris between 48.8°–49.6° N latitude. Only the carefully delimited 34,000 ha of vineyards within the départements Marne, Aube, Aisne, Haute-Marne and Seine-et-Marne may legally label their sparkling wine “Champagne”. Three noble grapes dominate the mosaic of 320 crus: Chardonnay (Côte des Blancs, Côte de Sézanne), Pinot Noir (Montagne de Reims, Aube’s Côte des Bar), and Pinot Meunier (Vallée de la Marne). Seven other historic varieties—Arbanne, Petit Meslier, Pinot Blanc, Pinot Gris, Pinot de Juillet, Pinot Rosé and Fromenteau—are authorised but rarely seen.
The méthode champenoise (now termed méthode traditionnelle) is codified by the Comité Champagne (CIVC) and the INAO. Hand-harvested whole-cluster pressing yields 102 litres of “cuvée” from 4,000 kg of grapes; secondary fermentation in bottle at 12 °C under 6 bar pressure, followed by minimum 15 months (30 for vintage) sur-lie ageing and daily remuage in pupitres, produces the signature perlage and autolytic complexity. Dosage (liqueur d’expédition) adjusts the final style: Brut Nature (0–3 g/L) to Doux (>50 g/L).
From the 17th-century Benedictine cellar master Dom Pierre Pérignon at Hautvillers Abbey to the 19th-century Veuve Clicquot’s riddling table and Claude Moët’s commercial vision, Champagne has embodied celebration and luxury. Prestige cuvées such as Louis Roederer Cristal (1876), Pol Roger Cuvée Sir Winston Churchill (1975) and Dom Pérignon (1921) define the apex of the category. Today 360 houses and 16,200 growers share terroir divided into 17 Grands Crus (e.g., Aÿ, Avize, Mesnil-sur-Oger) and 42 Premiers Crus, producing ~300 million bottles annually.
